				<content:encoded><![CDATA[<p>It all began in 2010 – While building our house, I made the all-important decision to incorporate a separate ‘cake kitchen’ into the grand plans! The Environmental Health Officer gave me a huge amount of help and guidance and a cake kitchen was installed, decorated, inspected and insured. It became time for some real work – so, with my two little girls packed off to playschool, I was free every day until 12.30 – that’s when the researching, tasting and baking began. I started making cakes and desserts and my business has gone from strength to strength ever since. Last year, we extended the cake kitchen to incorporate a workshop which is where most of the decorating is done – this is decorated in all things pink and where I spend most of my time. My daughter Clodagh, although only 8, has a very healthy interest in baking and often puts on her pink apron and hat and gives me a dig out. I can be heard all over the house calling out ‘Clodagh can you melt that/pass me that spatula/turn down the temperature’ etc! So that’s it – while my husband is at work, the three kids are in school and the baby in the creche, I can be found in the pink workshop baking, mixing, whisking and stirring.</p>
<p>Before that my husband and I had a restaurant which we ran for six years in Dunboyne village. I actually worked on the floor waitressing but often sneaked into the kitchen to ‘help’! In the end I made all the desserts and loved it – I must have caught the bug!  Dan went on to train as an accountant, which comes in handy sometimes, and I bake cakes and desserts to order for birthdays, christenings, weddings and tea parties. I also supply several restaurants which keeps me occupied mid-week. I also run a stall at several local markets, both seasonal and on a weekly basis, with some occasional help from one of my four children &#8211; this bit I really enjoy so I can meet my customers and chat while showcasing my cakes.</p>
<p>I am proud of the fact that all my cakes and desserts are home made to order, reasonably priced and are made using local and seasonal ingredients.</p>
